What a treasure trove of a book. I doubt there is anything left out of this very useful book.
This book is broken down into 5 parts.
1. What is Fermentation
2. Why do we Ferment
3. Ferments i.e the different types like Kefir, Cheese, Wine etc
4. What next
5. Fermenting at home.
The book is part very interesting science, such as even kissing a baby can pass on microbes of food they haven't eaten, or how some Japanese have certain microbes that help them get more out of digesting seaweed than people who don't have a large seaweed diet.
Then we get to know more about the different ferments and how to make them.
A very interesting, useful and comprehensive guide to eating more fermented food to improve our gut biome which in turn boosts our health and wellbeing. I will be boosting my intake of ferments!
